In late 2016 I started Kelmscott, a custom cake bakery, with a little mission to make cakes that reflect a better vision for the planet. 

As leading chefs and cooks, thinkers, writers, growers and farmers have been warning for some time, our food production and consumption habits in the developed world are on a dangerous trajectory.

We are overwhelmed by choice, waste, unsustainable and unethical production, packaging and marketing.  We can buy fresh raspberries with ease 365 days a year. At Australia’s major supermarkets we can buy milk for less than the cost of water. And many of us are so far removed from the growers, producers and makers of our food that we would struggle to identify a crop of wheat growing in a field.

I BELIEVE THAT A CONSCIENTIOUS, THOUGHTFUL, GENTLE AND UNHURRIED APPROACH COOKING, EATING AND SHARING FOOD IS A POWERFUL WAY TO LIVE MORE SUSTAINABLY AND affect positive environmental and social change.

Inspired by traditional baking I make and share cakes that nurture and sustain our planet.  

I love the cakes, slices, sweets and breads that our grandmas, nanas, nonnas, yiayias, omas, grand-mères, mormors and abuelas used to bake.  Is there anything better than a fresh berry and cream stuffed Victoria Sponge? No! BUT should I be making one in July? No! Let us instead enjoy a spiced spelt sponge filled with slow roasted quince, pear and cardamon or a warm apricot crumble made with the carefully frozen bounty of last summer’s crop.
